Often, when I google recipes, I put the word easy in front of the title of the dish. Sometimes, this serves me well, while other times the dish is also "easy" on flavor. I thought every once in a while, on Mondays, I'd share some of my successes.
Pumpkin Spice Muffins

Ingredients~
1 box spice cake mix (DRY- do not add egg or oil)
1 15oz can of pumpkin puree (I used half of a large can)
1/2 cup applesauce (I used a kiddie lunch cup)
Mix well and put in muffin cups. Top with a sprinkle of brown sugar and cinnamon mixed together or cook plain. 350* for 25-35 minutes
Moist, delicious and EASY!

P.S. From what I read, the pumpkin can substitute the eggs and oil with any cake mix...and supposedly tastes pretty good with the chocolate cake mix too. Maybe for those people with egg allergies.

OHHH I just love recipes like this (i.e. the ones that "dress-up" a cake mix!)...I have stolen, err rather acquired, several from Talia's blog! Thanks for sharing!! (now can you share that SUPER cute pumpkin basket too?? ;-)

Those were really good muffins! I heart easy recipes like that. OK, confession, I've tried the chocolate cake mix and pumpkin puree (with nothing else added, I read about it in Parents magazine)and thought the end result tasted and smelled like an adult multi-vitamin pill, you know, like if you chewed it up instead of swallowing it. It was disgusting and I immediately threw the entire cake away. Now I am wondering if I just completely screwed it up. Maybe all it needed was some apple sauce!

I love Make It Easy Monday! I've already tried these out and they are SO delicious and SO easy. They are going to be my fall go-to recipe for sure. I just made them Thursday and I'm contemplating making more today because they are already gone. Thanks!
